8 oz dark, fair trade finely chopped chocolate

1 cup cream (coconut cream or dairy)

1 1/2 tablespoons coconut oil

1/2 tsp vanilla if desired or other flavor

Cocoa powder for dusting

Put chocolate chips or chopped bars (preferably 70% cocoa or darker) into a bowl 

Heat cream until it almost boils then pour over chocolate, add vanilla and coconut oil and let sit for 2 minutes. Stir with a whisk from the center outwards until combined.

Refrigerate until firm (a couple of hours or overnight) then scoop into bitesize balls and roll between your palms until they are round. Roll them in cocoa powder to coat and or other fun things like seeds, spices, or powdered raspberries.

Freeze or refrigerate but bring them to room temperature before you enjoy them.
